SO good! Was looking for a quick cornbread recipe to go with a pot of beans….I didn’t have sour cream or milk, but after seeing this post I couldn’t wait to make it. So, I sub’d yogurt for the sour cream and half and half for the milk. It turned out fabulous! I don’t think I added enough lemon juice (small lemon) and the garlic butter from the potatoes leaked over and got the chicken breading wet. Only did russet potatoes but they were great. This was so delicious! The sweet potatoes came out great with the addition of corn stArch. Always doing it that way now. I also baked the kale into “kale chips” to add some crunch. This was delicious and pretty simple to make! My pomegranate molasses never turned into molasses (I used the recipe on the site) but it still added the sweet and tangy taste to the chicken. My meal did turn dark but stayed a bit more runny that I would have liked it. Next time I make this stew I’ll be sure to make saffron rice on the side.
